When briquettes are the right choice

Long cooks and commercial service. Briquettes burn at an even, predictable heat — and a commercial kitchen lives on what is predictable. When you are cooking for hours, stability is worth more than peak temperature.

Their uniform shape also means you can count: this many briquettes for this many hours. Lumpwood cannot give you that, because every piece is different.

When lumpwood is the right choice
